Ingredients

4 boneless, skinless chicken breasts

1 cup crumbled feta cheese

1/2 cup hot honey (store-bought or homemade)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh lemon juice

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Preheat the oven to 400°F (200°C).

Prepare the marinade: In a small bowl, whisk together the olive oil, minced garlic, smoked paprika, oregano, salt, pepper, and lemon juice.

Marinate the chicken: Place the chicken breasts in a large zip-top bag or shallow dish, and pour the marinade over the chicken. Ensure the chicken is well coated. Let it marinate in the refrigerator for at least 30 minutes (or up to overnight for more flavor).

Bake the chicken: Transfer the marinated chicken breasts to a greased baking dish. Bake in the preheated oven for 20 minutes.

Add feta and hot honey: Remove the chicken from the oven. Sprinkle crumbled feta evenly over the chicken breasts, then drizzle with hot honey.

Return to oven: Place the baking dish back in the oven and bake for an additional 10-15 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/75°C) and the feta is slightly golden.

Garnish: Once done, remove from the oven, and let it rest for 5 minutes. Garnish with freshly chopped parsley and serve with lemon wedges on the side.
