Ingredients
  

1 cup all-purpose flour

1 cup cornmeal

1 tablespoon baking powder

½ teaspoon salt

¼ cup granulated sugar

1 cup milk

2 large eggs

½ cup unsalted butter, melted

½ cup honey

1 cup sweet corn kernels (frozen or fresh)

1 teaspoon vanilla extract

Optional: honey butter for serving (1 stick unsalted butter, ½ cup honey, whipped together)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and grease a mini muffin tin.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, cornmeal, baking powder, salt, and granulated sugar.

      Mix Wet Ingredients: In another bowl, mix the milk, eggs, melted butter, honey, and vanilla extract until fully combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. Gently fold in the sweet corn kernels.

          Fill the Muffin Tin: Spoon the batter into the prepared mini muffin tin, filling each cup about ¾ full.
