1 lb boneless, skinless chicken thighs

1 cup all-purpose flour

1 tsp paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp salt

1/2 tsp black pepper

2 large eggs

1 cup panko breadcrumbs

1/4 cup unsalted butter, melted

1/3 cup honey

1/2 tsp chili powder (optional for a kick)

Fresh parsley, chopped (for garnish)

Instructions
 

Start by preparing the chicken. If using whole thighs, place them between two pieces of plastic wrap and pound them to an even thickness (about 1 inch). This helps them cook evenly.

    In a shallow bowl, combine the flour, paprika, garlic powder, onion powder, salt, and black pepper. Mix well.

      In another bowl, beat the eggs until well combined.

        Place the panko breadcrumbs in a third shallow bowl and set up a breading station with the flour mixture, eggs, and breadcrumbs.

          Dredge each chicken thigh into the flour mixture, shaking off any excess, then dip it into the egg, and finally coat it in the panko breadcrumbs.

            Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

              Place the breaded chicken thighs on the prepared baking sheet. Bake for 20-25 minutes, or until the chicken is golden brown and cooked through (internal temp should reach 165°F/74°C).

                While the chicken is baking, prepare the honey butter: In a small saucepan, melt the butter over medium heat. Stir in the honey and chili powder (if using), mixing until well combined and slightly heated. Remove from heat.

                  Once the chicken is done, drizzle the honey butter mixture over the hot chicken, ensuring each piece is generously coated. You can also brush it on with a pastry brush for an even layer.
