For the Cake:

2 cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

¾ cup unsalted butter, softened

1 cup granulated sugar

½ cup brown sugar, packed

3 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

2 cups fresh peaches, peeled and diced (about 3 medium peaches)

1 teaspoon cinnamon

For the Brown Sugar Frosting:

½ cup unsalted butter, softened

1 cup brown sugar, packed

¼ cup milk

2 cups powdered sugar

1 teaspoon vanilla extract

A pinch of salt

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

    Prepare the cake batter: In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.

      In a large bowl, using an electric mixer, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).

        Add the eggs one at a time to the butter mixture, beating well after each addition. Mix in the vanilla extract.

          Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, starting and ending with the flour mixture. Mix until just combined.

            Gently fold in the diced peaches until evenly distributed throughout the batter.

              Pour the batter evenly into the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

                While the cakes are baking, make the brown sugar frosting: In a saucepan over medium heat, combine the brown sugar and butter. Cook until the mixture comes to a boil, stirring constantly. Allow it to boil for 1 minute without stirring, then remove from heat.

                  Stir in the milk, and let the mixture cool for about 10 minutes. Once cooled, transfer to a mixing bowl and gradually add the powdered sugar, vanilla extract, and a pinch of salt. Beat until smooth and creamy.

                    Assemble the cake: Once the cakes have cooled in the pans for about 10 minutes, remove them from the pans and transfer to a wire rack to cool completely.

                      Once cooled, place one cake layer on your serving plate and spread a generous amount of frosting on top. Place the second layer on top and frost the top and sides of the entire cake.

                        Garnish with additional diced peaches or a sprinkle of cinnamon if desired.
