For the Pie Crust:

2 1/2 cups all-purpose flour

1 teaspoon salt

1 tablespoon sugar

1 cup unsalted butter (cold, cut into cubes)

6-8 tablespoons ice water

For the Apple Filling:

6-8 medium Granny Smith apples (peeled, cored, and sliced)

3/4 cup granulated sugar

1/4 cup brown sugar

2 teaspoons ground cinnamon

1/4 teaspoon nutmeg

2 tablespoons lemon juice

2 tablespoons cornstarch

1 tablespoon unsalted butter (diced, for topping)

For the Topping:

1 egg (beaten, for egg wash)

1 tablespoon milk

Instructions
 

Make the Pie Crust:

    - In a large mixing bowl, whisk together the flour, salt, and sugar.

      - Add the cold butter cubes and use a pastry cutter or your fingertips to blend until the mixture resembles coarse crumbs.

        - Stir in the ice water, a tablespoon at a time, until the dough begins to come together. Divide in half, shape into discs, wrap in plastic, and refrigerate for at least 1 hour.

          Prepare the Apple Filling:

            - In a large bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat the apples evenly. Let the mixture sit for about 15 minutes while you preheat the oven.

              Preheat the Oven:

                - Preheat your oven to 425°F (220°C).

                  Roll Out the Dough:

                    - On a lightly floured surface, roll out one disc of dough to fit a 9-inch pie dish. Place the crust in the dish and trim the excess.

                      Add the Filling:

                        - Pour the apple filling into the prepared crust. Dot with diced butter for added richness.

                          Top the Pie:

                            - Roll out the second disc of dough and place it over the filling. Trim and crimp the edges to seal. Cut slits in the top crust to allow steam to escape, and brush the surface with the beaten egg mixed with milk.

                              Bake:
