Ingredients

1 cup dried hibiscus flowers

4 cups water

1 cup fresh strawberries, hulled and sliced

1/2 cup fresh lemon juice (about 4 lemons)

1/2 cup honey (or to taste)

2 cups cold sparkling water

Lemon slices and fresh mint for garnish

Instructions

In a saucepan, bring 4 cups of water to a boil. Once boiling, remove from heat and add the dried hibiscus flowers. Allow to steep for about 15-20 minutes until the color deepens and the tea becomes vibrant.

Strain the hibiscus tea into a pitcher, discarding the flowers, and let it cool to room temperature.

In a blender, combine the sliced strawberries and a few tablespoons of the cooled hibiscus tea. Blend until smooth. If desired, strain through a fine mesh sieve to remove the seeds for a smoother texture.

In the pitcher with the hibiscus tea, add the fresh lemon juice and honey. Stir well until the honey is fully dissolved.

Incorporate the strawberry puree into the hibiscus and lemon mixture. Adjust sweetness with additional honey if needed.

Chill the mixture in the refrigerator for at least 30 minutes. When ready to serve, add the cold sparkling water to the pitcher for a fizzy refreshing drink.

Pour the Hibiscus Tea Strawberry-Lemonade Refresher into glasses filled with ice. Garnish with lemon slices and fresh mint leaves.
