4 bone-in pork chops (about 1 inch thick)

2 tablespoons olive oil

3 cloves garlic, minced

2 teaspoons fresh rosemary, chopped

2 teaspoons fresh thyme, chopped

1 teaspoon fresh parsley, chopped

1 teaspoon salt

1/2 teaspoon black pepper

Zest of 1 lemon

Juice of 1 lemon

1/4 cup honey

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a small bowl, mix together olive oil, garlic, rosemary, thyme, parsley, salt, pepper, lemon zest, lemon juice, honey, Dijon mustard, and apple cider vinegar. Stir until well combined.

      Marinate the Pork Chops: Place the pork chops in a large resealable plastic bag or a shallow dish. Pour the marinade over the pork chops, ensuring they are evenly coated. Seal the bag or cover the dish and let marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

        Bake the Pork Chops: Remove the pork chops from the marinade and place them on a baking sheet lined with parchment paper. Reserve the remaining marinade. Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145°F (63°C).

          Prepare the Zesty Sauce: While the pork chops are baking, pour the reserved marinade into a small saucepan. Bring it to a simmer over medium heat and cook for about 5-7 minutes until it thickens slightly. Be sure to stir occasionally.

            Serve: Once the pork chops are done baking, remove them from the oven and let them rest for 5 minutes. Drizzle the zesty sauce over the pork chops before serving.
