2 large sweet potatoes, peeled and diced

1 cup carrots, sliced

1 cup celery, diced

1 medium onion, chopped

3 cloves garlic, minced

1 can (14 oz) diced tomatoes with juice

4 cups vegetable broth

1 can (15 oz) chickpeas, drained and rinsed

1 cup kale, roughly chopped

2 teaspoons ground cumin

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon ground black pepper

Salt to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook for about 3-4 minutes until translucent. Stir in the minced garlic and cook for another minute until fragrant.

    Add Veggies: Incorporate the diced sweet potatoes, sliced carrots, and diced celery. Stir well to combine, and let them cook for about 5-6 minutes until they begin to soften.

      Spices and Tomatoes: Sprinkle in the ground cumin, smoked paprika, dried thyme, and black pepper. Stir to coat the vegetables in the spices. Then, add the canned diced tomatoes (with juice) into the pot.

        Simmer the Stew: Pour in the vegetable broth and add the chickpeas. Bring the mixture to a gentle boil, then reduce the heat to low and cover the pot. Let it simmer for 25-30 minutes, or until the sweet potatoes are tender.

          Add the Greens: Stir in the chopped kale and let it wilt for about 5 minutes. Taste the stew and add salt as needed.
