Hearty Chicken Vegetable Soup: A Comforting Classic

Ingredients
  

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, sliced

2 stalks celery, sliced

1 red bell pepper, chopped

1 medium zucchini, diced

1 cup green beans, trimmed and cut into pieces

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

6 cups chicken broth

2 cups cooked chicken, shredded (use rotisserie chicken for convenience)

1 cup corn (fresh, frozen, or canned)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

    Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add the sliced carrots and celery to the pot, cooking for about 5 minutes until they start to soften.

        Incorporate the red bell pepper, zucchini, and green beans, stirring well for another 3-4 minutes.

          Sprinkle in the dried thyme, oregano, and add the bay leaf. Mix well to combine.

            Pour in the chicken broth and bring the mixture to a boil.

              Once boiling, reduce the heat to low, add the shredded chicken and corn, and let it simmer for about 20-25 minutes, allowing the flavors to meld together.

                Taste the soup and season with salt and pepper as needed, removing the bay leaf before serving.

                  Ladle the soup into bowls and garnish with chopped fresh parsley for a touch of brightness.
