Healthy Mediterranean Tzatziki Chicken Salad

Ingredients
  

2 cups cooked chicken breast, shredded

1 cup plain Greek yogurt

1 cucumber, grated and excess water squeezed out

1 clove garlic, minced

1 tablespoon fresh dill, chopped

1 tablespoon fresh lemon juice

1 teaspoon olive oil

Salt and pepper to taste

2 cups mixed greens (such as spinach, arugula, or romaine)

1/2 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

1/4 cup Kalamata olives, pitted and sliced

Feta cheese for garnish (optional)

Instructions
 

In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, olive oil, salt, and pepper. Mix until well combined to create the tzatziki dressing.

    In a separate large bowl, add the shredded chicken and pour the tzatziki dressing over it. Toss until the chicken is thoroughly coated.

      In a large salad bowl, add the mixed greens, cherry tomatoes, red onion, and Kalamata olives.

        Add the tzatziki chicken on top of the salad base. Gently toss everything together until well mixed.

          If desired, sprinkle feta cheese over the top before serving.

            Serve immediately, or chill in the refrigerator for about 30 minutes for an even fresher taste.
