Ingredients

4 tilapia fillets

2 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon whole grain mustard

1 teaspoon olive oil

1 teaspoon lemon juice

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

1/2 cup panko breadcrumbs (or whole wheat breadcrumbs for a healthier option)

Fresh parsley, chopped for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

Make the Honey Mustard Glaze: In a small bowl, whisk together the honey, Dijon mustard, whole grain mustard, olive oil, lemon juice, garlic powder, paprika, salt, and pepper until well blended.

Prepare the Tilapia Fillets: Pat the tilapia fillets dry with paper towels. Place them on the prepared baking sheet.

Coat the Fish: Spoon the honey mustard glaze evenly over the top of each tilapia fillet, ensuring they are well coated.

Add Breadcrumbs: In a separate bowl, mix the panko breadcrumbs with a pinch of salt and pepper. Sprinkle the breadcrumb mixture generously over the glazed tilapia fillets, pressing down lightly to help the breadcrumbs adhere.

Bake the Tilapia: Bake the tilapia in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork and the breadcrumbs are golden brown and crispy.

Garnish and Serve: Once baked, remove the tilapia from the oven and let it rest for a couple of minutes. Garnish with fresh chopped parsley if desired, and serve with your favorite side dishes, such as steamed vegetables or brown rice.
