Ingredients
  

1 can (15 oz) chickpeas, rinsed and drained

1 large cucumber, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1/2 cup crumbled feta cheese

1/4 cup fresh parsley or cilantro, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 garlic clove, minced

Salt and pepper to taste

1/2 teaspoon dried oregano (optional)

Instructions
 

In a large mixing bowl, combine the rinsed chickpeas, diced cucumber, halved cherry tomatoes, and chopped red onion. Toss gently to mix the ingredients together.

    Add the crumbled feta cheese and chopped parsley (or cilantro) to the bowl, and fold them into the salad carefully, so the feta doesn’t break apart too much.

      In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, pepper, and dried oregano (if using) until well combined.

        Pour the dressing over the salad mixture and toss everything together gently to ensure the vegetables and chickpeas are evenly coated.

          Taste and adjust the seasoning if necessary. You can add more salt or pepper based on your preference.

            Let the salad sit for about 15-20 minutes to allow the flavors to meld. Serve chilled or at room temperature.
