Ingredients
  

1 pound boneless, skinless chicken breast, diced

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

1 cup cooked brown rice or quinoa

1 can (15 oz) black beans, rinsed and drained

1 cup cherry tomatoes, halved

1 cup corn (fresh or frozen)

1 ripe avocado, diced

1 cup shredded lettuce

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Cook the Chicken:

    - In a large skillet, heat olive oil over medium-high heat. Add the diced chicken breast.

      - Season with chili powder, cumin, garlic powder, paprika, salt, and pepper. Cook for about 5-7 minutes or until the chicken is fully cooked and golden brown, stirring occasionally.

        Prepare Rice/Quinoa:

          - While the chicken is cooking, prepare your brown rice or quinoa according to package directions if not already done.

            Assemble the Bowls:

              - Once the chicken is cooked, remove it from heat. In bowls, start by adding a base layer of cooked brown rice or quinoa.

                - Top with black beans, cherry tomatoes, corn, and shredded lettuce.

                  Add Chicken:

                    - Spoon the cooked chicken evenly over each bowl.

                      Finish with Toppings:

                        - Add diced avocado on top and garnish with fresh cilantro. Serve with lime wedges on the side for an extra splash of flavor.
