8 oz whole wheat pasta

2 cups fresh broccoli florets

3 cloves garlic, minced

1/4 cup extra-virgin olive oil

1/4 teaspoon red pepper flakes (optional)

1 lemon (zest and juice)

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Salt and pepper to taste

Cook the Pasta: In a large pot, bring salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and return the pasta to the pot.

    Blanch the Broccoli: While the pasta is cooking, bring a small pot of water to a boil. Add the broccoli florets and blanch for 2-3 minutes until they are vibrant green and tender-crisp. Drain and plunge into an ice bath to stop the cooking process. Set aside.

      Make the Sauce: In a large skillet, heat the olive oil over medium heat. Add minced garlic and red pepper flakes (if using) and sauté for about 1 minute, or until fragrant.
