2 cups plain Greek yogurt

1 cup fresh or frozen blueberries

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 tablespoon lemon juice

A pinch of salt

Prepare the Blueberries: If using fresh blueberries, rinse them thoroughly. If using frozen blueberries, allow them to thaw for about 10 minutes.

    Blend the Mixture: In a blender or food processor, combine the Greek yogurt, blueberries, honey (or maple syrup), vanilla extract, lemon juice, and a pinch of salt. Blend until smooth and the blueberries are well-incorporated, but leave some small chunks for texture if desired.

      Taste and Adjust: Sample the mixture and adjust sweetness if necessary by adding more honey/maple syrup. Blend again if you add anything.

        Chill the Mixture: Transfer the mixture to a bowl and refrigerate for about 30 minutes to chill it further.

          Freeze: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency. If you do not have an ice cream maker, you can pour the mixture into a shallow dish and freeze for about 2-3 hours, stirring every 30 minutes.

              Store: If you have leftovers, store in an airtight container in the freezer. Let it sit at room temperature for a few minutes before serving for easier scooping.
