8 oz (225g) whole wheat pasta (penne or fusilli)

1 block (8 oz) feta cheese

2 cups cherry tomatoes, halved

1 red bell pepper, diced

1 zucchini, sliced

3 cloves garlic, minced

1/4 cup olive oil

1 tsp dried oregano

1/2 tsp red pepper flakes (optional)

Fresh basil leaves, for garnish

Salt and pepper, to taste

Zest of 1 lemon (for a fresh finish)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Vegetables: In a large baking dish, combine the halved cherry tomatoes, diced red bell pepper, and sliced zucchini. Add the minced garlic, olive oil, dried oregano, red pepper flakes, and season with salt and pepper. Mix everything until the vegetables are well coated.

      Add Feta Cheese: Place the block of feta cheese in the center of the vegetable mixture. Drizzle a little more olive oil over the feta and season with a pinch of salt and pepper.

        Bake: Bake in the preheated oven for about 25-30 minutes or until the vegetables are tender, and the feta is soft and golden.

          Cook the Pasta: While the feta and vegetables are baking, bring a pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

            Combine: Once the feta and vegetables are ready, remove from the oven. Using a fork, mash the feta cheese and mix it with the roasted vegetables until creamy. If the mixture is too thick, stir in some reserved pasta water until you reach your desired consistency.

              Mix in Pasta: Add the drained pasta to the baking dish and toss to combine, ensuring that every piece of pasta is coated in the delicious feta and vegetable sauce.

                Serve: Serve hot, garnished with fresh basil leaves and a sprinkle of lemon zest for a refreshing touch.
