Halloween Stuffed Peppers

Ingredients
  

4 large bell peppers (orange, green, or red)

1 cup cooked rice (white or brown)

1 lb ground beef or turkey (or a plant-based alternative)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (canned or frozen)

1 cup diced tomatoes (fresh or canned)

1 tsp cumin

1 tsp chili powder

1/2 tsp garlic powder

Salt and pepper to taste

1 cup shredded cheddar cheese (or dairy-free cheese)

Olive oil for drizzling

Fresh cilantro or parsley for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    Carefully cut the tops off the bell peppers and remove the seeds and membranes. Set aside the tops for later use.

      In a large skillet, heat a drizzle of olive oil over medium heat. Add the ground beef (or turkey), breaking it apart as it cooks. Season with salt, pepper, cumin, chili powder, and garlic powder. Cook until browned and fully cooked through.

        Stir in the cooked rice, black beans, corn, and diced tomatoes. Mix well and allow the mixture to cook for another 5-7 minutes until everything is heated through.

          Remove from heat and stir in half of the shredded cheese until melted and combined.

            Spoon the stuffing mixture into each bell pepper generously, packing it down slightly.

              Place the filled peppers upright in a baking dish. If they don’t stand well, you can slice a thin layer off the bottom to create a flat base.

                Top each pepper with the remaining cheese, and place the tops back on the peppers for an extra spooky look.

                  Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is bubbly and golden.

                    Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro or parsley before serving.
