2 large russet potatoes, diced into small cubes

1 medium onion, finely chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1 cup chicken broth (low sodium)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Heat the skillet: In a large skillet over medium heat, add the olive oil. Once hot, add the diced potatoes and sauté for about 8-10 minutes, or until they begin to soften and turn golden brown.

    Add onions and peppers: Add the chopped onion and bell pepper to the skillet. Sauté for another 5 minutes, stirring occasionally until the onion is translucent.

      Cook garlic and turkey: Push the vegetables to the side of the skillet, and add the minced garlic to the center, cooking for about 30 seconds until fragrant. Then, add the ground turkey, breaking it apart with a spatula. Cook until browned and fully cooked through, about 5-7 minutes.

        Season it up: Sprinkle in the smoked paprika, dried oregano, salt, and black pepper. Stir everything together to combine well.

          Add broth: Pour in the chicken broth, scraping any browned bits off the bottom of the skillet. Bring to a gentle simmer and let it cook for an additional 10-15 minutes, until the potatoes are fully tender and the broth has slightly thickened.
