1 pound ground beef

1 can (15 oz) baked beans (your favorite variety)

1 can (14.5 oz) diced tomatoes, undrained

1 cup diced onion

1 cup bell pepper, diced (any color)

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

Salt and pepper to taste

2 cups shredded cheddar cheese

1 cup corn (canned or frozen)

1 cup crushed tortilla chips or Fritos (for topping)

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Beef: In a large skillet over medium heat, brown the ground beef until fully cooked. Break it apart with a spatula, about 5-7 minutes. Drain any excess fat.

      Sauté Veggies: Add diced onions, bell peppers, and garlic to the skillet. Sauté for about 5 minutes or until the vegetables are softened.

        Mix Ingredients: Stir in the baked beans, diced tomatoes (with juices), chili powder, cumin, smoked paprika, salt, and pepper. Cook for another 5 minutes, allowing the flavors to meld, then remove from heat.

          Assemble the Casserole: In a baking dish (9x13 inches), layer the beef and bean mixture evenly. Sprinkle corn over the top, followed by one cup of shredded cheddar cheese.

            Top it Off: Finish by spreading crushed tortilla chips or Fritos over the cheese layer. Then, sprinkle the remaining cup of cheese on top.

              Bake: Place the casserole in the preheated oven and bake for 25-30 minutes or until bubbly and the cheese is melted and golden.

                Garnish: Let it cool for 5 minutes before serving. Garnish with fresh cilantro for an extra burst of flavor.
