Ingredients
  

1 lb sirloin steak (cut into 1-inch cubes)

1 lb shrimp (peeled and deveined)

2 bell peppers (red and yellow, cut into 1-inch pieces)

1 small red onion (cut into wedges)

2 tablespoons olive oil

Salt and pepper (to taste)

For Chimichurri:

1 cup fresh parsley (finely chopped)

1/2 cup fresh cilantro (finely chopped)

4 cloves garlic (minced)

1/2 teaspoon red pepper flakes (adjust to taste)

1/3 cup red wine vinegar

1 cup olive oil

Salt (to taste)

Pepper (to taste)

Juice of 1 lime

Instructions
 

Prepare the Chimichurri:

    - In a bowl, combine the parsley, cilantro, minced garlic, red pepper flakes, red wine vinegar, lime juice, salt, and pepper.

      - Gradually whisk in the olive oil until well combined. Adjust seasoning as needed. Let it sit for at least 30 minutes to allow flavors to meld.

        Marinate the Steak:

          - In a bowl, add the cubed steak and drizzle with olive oil. Season generously with salt and pepper.

            - Let it marinate for at least 20 minutes while you prepare the skewers.

              Assemble the Skewers:

                - On skewers, alternate threading the marinated steak cubes, shrimp, bell pepper pieces, and onion wedges. Repeat until all ingredients are used, making sure to leave some space between each item.

                  Preheat the Grill:

                    - Preheat your grill to medium-high heat. Oil the grill grates lightly to prevent sticking.

                      Grill the Skewers:

                        - Place the skewers on the grill. Cook for about 2-3 minutes on each side for the shrimp until they are pink and opaque, and for the steak until it reaches your desired doneness (about 4-6 minutes for medium rare).

                          - Keep an eye on them to prevent burning.

                            Serve:

                              - Once cooked, remove the skewers from the grill. Drizzle with chimichurri sauce or serve it as a dipping sauce on the side.

                                Garnish:

                                  - Optionally, garnish with additional chopped parsley and lime wedges for an extra fresh touch.
