Ingredients
  

1 cup Greek yogurt (plain)

1 ½ cups all-purpose flour (plus extra for dusting)

1 tsp baking powder

½ tsp salt

1 tbsp olive oil

½ tsp garlic powder (optional)

Fresh herbs (like rosemary, thyme, or oregano - for garnish)

Olive oil for brushing (optional)

Instructions
 

In a mixing bowl, combine the Greek yogurt, baking powder, salt, olive oil, and garlic powder (if using). Mix until well combined.

    Gradually add the flour, stirring until a dough begins to form. You may need to add a bit more flour depending on the humidity and the yogurt's consistency.

      Transfer the dough onto a floured surface. Knead for 2-3 minutes until it becomes smooth and elastic.

        Divide the dough into equal portions, depending on how big you want your flatbreads (3-4 portions).

          Roll each portion out into a circle or oval shape, about ¼ inch thick. Lightly dust with flour as needed to prevent sticking.

            Preheat a skillet over medium heat and lightly grease with olive oil if desired.

              Cook each flatbread for about 2-3 minutes on each side, or until golden brown and cooked through. You can press down with a spatula for an even cook.

                Once cooked, brush with olive oil and sprinkle fresh herbs on top for added flavor.

                  Serve warm with your favorite dips, toppings, or alongside grilled meats and salads.
