1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup cornstarch

1/4 cup all-purpose flour

2 large eggs, beaten

Salt and pepper to taste

Vegetable oil, for frying

For the sauce:

2 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon hoisin sauce

1 tablespoon sugar

1 tablespoon sesame oil

2 cloves garlic, minced

1-inch piece ginger, grated

1 teaspoon red pepper flakes (adjust to taste)

1 green onion, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the chicken: In a large mixing bowl, season the chicken pieces with salt and pepper. In a separate bowl, combine cornstarch and flour. Dip each piece of chicken first into the beaten eggs and then into the cornstarch-flour mixture, ensuring they are well coated.

    Fry the chicken: In a large skillet or wok, heat about 1/2 inch of vegetable oil over medium-high heat. Once the oil is hot (test by dropping in a small piece of chicken; it should sizzle), carefully add the coated chicken pieces in batches. Fry until golden brown and cooked through, about 4-5 minutes per batch. Remove the chicken and drain on paper towels.

      Make the sauce: In a small bowl, mix together the soy sauce, rice vinegar, hoisin sauce, sugar, sesame oil, garlic, ginger, and red pepper flakes.

        Combine chicken and sauce: In the same skillet used for frying (drain excess oil if necessary), pour in the sauce and bring to a simmer over medium heat. Add the fried chicken and toss to coat evenly in the sauce. Cook for an additional 2-3 minutes until the chicken is heated through and the sauce is glossy.

          Serve: Transfer the General Tso's chicken to a serving platter. Garnish with sliced green onions and a sprinkle of sesame seeds. Serve hot over steamed rice or noodles.
