Ingredients

1 lb sirloin steak, cut into bite-sized pieces

9 oz cheese-filled tortellini (fresh or frozen)

4 cloves garlic, minced

1 medium onion, diced

1 red bell pepper, diced

2 cups baby spinach leaves

1 cup beef broth

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Grated Parmesan cheese (for serving)

Fresh parsley, chopped (for garnish)

Instructions

Cook the Tortellini: In a large pot of salted boiling water, cook the cheese-filled tortellini according to package instructions. Drain and set aside.

Sear the Steak: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sirloin steak pieces, season with salt and pepper, and sear until browned on all sides (about 4-5 minutes). Remove the steak from the skillet and set aside.

Sauté Vegetables: In the same skillet, add another tablespoon of olive oil. Add the diced onion and red bell pepper. Sauté for about 3-4 minutes until softened. Stir in minced garlic and Italian seasoning, and cook for an additional minute until fragrant.

Combine Ingredients: Return the seared steak back to the skillet. Pour in the beef broth and bring to a simmer. Add the cooked tortellini and baby spinach, stirring gently to combine. Cook until the spinach has wilted and everything is heated through (about 2-3 minutes).

Serve: Taste and adjust seasoning with salt and pepper if necessary. Serve hot, garnished with grated Parmesan cheese and chopped fresh parsley.
