Ingredients
  

  • 8 ounces fettuccine pasta or any preferred pasta
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 cup heavy cream for a rich sauce
  • 1 cup freshly grated Parmesan cheese plus extra for serving
  • 3 cloves garlic minced
  • 2 tablespoons unsalted butter for sautéing
  • 1 teaspoon Italian seasoning for added flavor
  • 1/2 teaspoon red pepper flakes optional, for heat
  • 2 tablespoons olive oil for cooking chicken
  • salt and pepper to taste

Instructions
 

  • Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  • In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Add the chicken pieces, season with salt and pepper, and sauté until cooked through, about 5-7 minutes. Remove chicken and set aside.
  • In the same skillet, reduce the heat to medium and add the remaining tablespoon of butter. Add the minced garlic and sauté until fragrant, about 1 minute. Stir in the heavy cream and bring to a simmer.
  • Gradually whisk in the grated Parmesan cheese, Italian seasoning, and red pepper flakes (if using) until smooth. If the sauce is too thick, add reserved pasta water a little at a time to reach desired consistency.
  • Add the cooked chicken and drained pasta to the skillet, tossing to combine and heat through. Adjust seasoning with salt and pepper if necessary.
  • Serve immediately, garnished with extra Parmesan cheese and freshly cracked black pepper.

Tip 1: For extra flavor, marinate the chicken in garlic and herbs before cooking.
Tip 2: This dish can be made ahead and reheated, but the pasta may absorb the sauce; add more cream when reheating.
