6 bone-in, skin-on chicken thighs

4 cloves garlic, minced

Zest and juice of 2 large lemons

1/4 cup olive oil

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon red pepper flakes (optional, for a bit of heat)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Prepare the Marinade: In a mixing bowl, combine minced garlic, lemon zest, lemon juice, olive oil, rosemary, thyme, salt, black pepper, and red pepper flakes (if using). Whisk until well incorporated.

    Marinate the Chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is thoroughly coated. Seal the bag or cover the dish with plastic wrap. Refrigerate for at least 1 hour, preferably overnight for the best flavor.

      Preheat the Oven: When ready to cook, preheat your oven to 400°F (200°C).

        Arrange Chicken: Remove the chicken from the marinade and shake off excess. Place the thighs skin-side up on a baking sheet lined with parchment paper or in a large baking dish. Reserve the remaining marinade.

          Bake the Chicken: Bake in the preheated oven for 35-40 minutes or until the chicken is cooked through and the skin is golden brown and crispy. An internal temperature of 165°F (75°C) is recommended.
