4 boneless, skinless chicken breasts

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup olive oil

2 tablespoons lemon juice

For the Creamy Mashed Potatoes:

2 pounds Yukon Gold potatoes, peeled and cubed

1/2 cup heavy cream

1/4 cup unsalted butter

Salt and pepper to taste

For the Roasted Carrots:

1 pound baby carrots

2 tablespoons olive oil

1 teaspoon honey

Salt and pepper to taste

Fresh parsley for garnish

Marinate the Chicken: In a bowl, combine minced garlic, chopped rosemary, thyme, smoked paprika, salt, black pepper, olive oil, and lemon juice. Add chicken breasts, ensuring they are well coated in the marinade. Cover and let marinate in the fridge for at least 30 minutes (or up to 2 hours).

    Prepare the Roasted Carrots: Preheat the oven to 425°F (220°C). On a baking sheet, toss baby carrots with olive oil, honey, salt, and pepper. Spread them out in a single layer. Roast in the oven for 20-25 minutes or until tender and caramelized, stirring halfway through.

      Cook the Chicken: While the carrots are roasting, heat a large skillet over medium-high heat. Remove chicken from the marinade, letting excess drip off. Place chicken in the skillet and cook for 6-7 minutes per side or until the internal temperature reaches 165°F (74°C). Remove from heat and let rest for a few minutes.

        Make the Creamy Mashed Potatoes: While the chicken cooks, bring a large pot of salted water to a boil. Add cubed potatoes and simmer until fork-tender, about 15-18 minutes. Drain and return to the pot. Add heavy cream and butter, then mash until creamy. Season with salt and pepper to taste.

          Plate the Dish: On each plate, serve a generous scoop of creamy mashed potatoes, top with the garlic herb chicken, and arrange the roasted carrots alongside. Garnish with fresh parsley if desired.
