Ingredients

4 bone-in pork chops (1-inch thick)

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)

Salt and pepper, to taste

1 tablespoon olive oil

Lemon wedges, for serving

Instructions

Prepare the Pork Chops: Remove the pork chops from the refrigerator and let them sit at room temperature for about 30 minutes. Pat them dry with paper towels and season both sides generously with salt and pepper.

Sear the Chops: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops and sear them for about 4-5 minutes on each side or until they are golden brown and cooked through (internal temperature should reach 145°F).

Make the Garlic Butter: Reduce the heat to medium. Push the chops to one side of the skillet. Add the butter, minced garlic, thyme, and rosemary to the empty side of the skillet. As the butter melts, stir the garlic and herbs to combine.

Baste the Chops: Once the butter is melted and bubbling, tilt the skillet slightly and use a spoon to drizzle the garlic butter over the pork chops for about 1-2 minutes. This will enhance the flavor and keep the chops moist.

Rest the Chops: Remove the skillet from heat and transfer the pork chops to a plate. Allow them to rest for about 5 minutes to retain their juices.

Serve: Serve the garlic butter pork chops with lemon wedges on the side for a fresh finish. Drizzle any remaining garlic butter from the skillet over the chops for extra flavor.
