Garlic Butter Chicken Served with Parmesan Rice

Ingredients
  

For the Garlic Butter Chicken:

4 boneless, skinless chicken breasts

4 tablespoons unsalted butter

6 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1/4 cup chicken broth

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

For the Parmesan Rice:

1 cup long-grain white rice

2 cups chicken broth

1/2 cup grated Parmesan cheese

2 tablespoons unsalted butter

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Parmesan Rice:

    - In a medium saucepan, bring 2 cups of chicken broth to a boil.

      - Add the rice and a pinch of salt. Stir, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and liquid is absorbed.

        - Remove from heat, then stir in 2 tablespoons of butter and the grated Parmesan cheese. Season with salt and pepper to taste. Keep warm.

          Cook the Garlic Butter Chicken:

            - While the rice cooks, season both sides of the chicken breasts with salt and pepper.

              - In a large skillet over medium heat, melt 4 tablespoons of butter. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant.

                - Add the seasoned chicken breasts to the skillet. Cook for about 6-7 minutes on each side, or until the chicken is golden and cooked through (internal temperature should reach 165°F/75°C).

                  - Once the chicken is cooked, remove it from the skillet and keep it warm on a plate.

                    - In the same skillet, add the dried thyme, rosemary, chicken broth, and lemon juice. Scrape up any browned bits from the bottom of the pan and simmer for 2-3 minutes.

                      Combine and Serve:

                        - Return the chicken to the skillet and spoon the garlic butter sauce over it. Cook for an additional minute to reheat the chicken.

                          - Serve the Garlic Butter Chicken over a bed of Parmesan Rice, drizzling extra garlic butter sauce on top.

                            - Garnish with freshly chopped parsley.
