4 medium-sized russet potatoes, peeled and diced

1 large onion, thinly sliced

1 lb smoked Polish sausage, sliced into rounds

3 tablespoons vegetable oil

2 tablespoons butter

3 garlic cloves, minced

Salt and black pepper, to taste

1 teaspoon paprika

Fresh parsley, chopped (for garnish)

Preheat the Skillet: In a large skillet, add the vegetable oil and butter over medium heat until the butter has melted and is sizzling.

    Cook the Potatoes: Add the diced potatoes to the skillet. Season them with salt, pepper, and paprika. Stir to coat the potatoes in the oil and butter. Cover and cook for about 10-12 minutes, stirring occasionally, until they begin to soften and turn golden.

      Sauté the Onions: Add the sliced onions to the skillet with the potatoes. Continue cooking for another 5 minutes until the onions are translucent and fragrant.

        Add the Sausage: Stir in the sliced smoked Polish sausage and minced garlic. Cook for an additional 5-7 minutes until the sausage is heated through and the potatoes are crispy and golden.

          Final Seasoning and Serve: Taste and adjust the seasoning with more salt and pepper if needed. Remove from heat and garnish with chopped parsley. Serve hot!
