1 cup fresh raspberries (plus extra for garnish)

1 cup mascarpone cheese

1 cup heavy cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup brewed strong coffee (cooled)

1 tablespoon coffee liqueur (optional)

1 packet (7 oz) ladyfinger cookies

Unsweetened cocoa powder for dusting

Fresh mint leaves for garnish

Prepare Raspberries: In a small bowl, gently mash the fresh raspberries with a fork, leaving some whole for garnish later. Set aside.

    Make the Mascarpone Mixture: In a large mixing bowl, combine the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, beat until soft peaks form and the mixture is smooth and fluffy.

      Combine Coffee and Liqueur: In a shallow dish, mix the brewed coffee with coffee liqueur (if using).

        Assemble Tiramisu: Quickly dip each ladyfinger into the coffee mixture, ensuring they are moist but not soggy. Lay them in a single layer in a 9x9 inch dish.

          Layer with Cream and Raspberries: Spread half of the mascarpone mixture over the ladyfingers, smoothing it out evenly. Then, sprinkle half of the mashed raspberries on top.

            Repeat Layers: Add another layer of coffee-dipped ladyfingers, then top with the rest of the mascarpone mixture. Finish with the remaining raspberries spread uniformly over the top.

              Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

                Serve: Before serving, dust the top with unsweetened cocoa powder and garnish with fresh raspberries and mint leaves.
