Ingredients
  

4 cups mixed baby greens (arugula, spinach, and kale)

1 large apple (Granny Smith or Honeycrisp), thinly sliced

1/2 cup pomegranate seeds

1/2 cup crumbled feta cheese

1/4 cup toasted walnuts or pecans

1/4 cup dried cranberries

1 small red onion, thinly sliced

1/4 cup apple cider vinegar

1/4 cup extra virgin olive oil

1 tablespoon maple syrup

1 teaspoon Dijon mustard

Salt and pepper to taste

Instructions
 

In a large bowl, combine the mixed baby greens, apple slices, pomegranate seeds, crumbled feta, toasted nuts, dried cranberries, and red onion.

    In a separate small bowl, whisk together apple cider vinegar, olive oil, maple syrup, Dijon mustard, salt, and pepper until thickened and well combined.

      Drizzle the dressing over the salad ingredients and gently toss to coat everything evenly.

        Taste and adjust seasoning if necessary, adding more salt, pepper, or maple syrup as desired.

          Serve immediately for the freshest flavor, or refrigerate for up to 30 minutes before serving to let the flavors meld.
