Ingredients
  

  • 8 ounces cavatappi pasta or any short pasta of choice
  • 2 large yellow onions sliced thinly
  • 1 tablespoon fresh thyme chopped
  • 3 cloves garlic minced
  • 4 cups beef broth low-sodium preferred
  • 1 cup heavy cream
  • 1 cup Gruyère cheese shredded
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt or to taste

Instructions
 

  • In a large pot, heat the olive oil and butter over medium heat. Add the sliced onions and cook until they are soft and caramelized, about 15 minutes, stirring frequently to prevent burning.
  • Add the minced garlic and fresh thyme to the pot, cooking for an additional minute until fragrant.
  • Pour in the beef broth and bring the mixture to a boil. Stir in the cavatappi pasta, cover, and reduce the heat to a simmer. Cook for about 10-12 minutes, or until the pasta is al dente.
  • Once the pasta is cooked, stir in the heavy cream and shredded Gruyère cheese until melted and creamy. Season with salt and black pepper to taste.
  • Serve the French Onion Pasta hot, garnished with additional thyme or cheese if desired.
