4 boneless, skinless chicken thighs

2 large onions, thinly sliced

3 cloves garlic, minced

1 cup beef broth

1 cup shredded Gruyère cheese

2 tablespoons olive oil

1 tablespoon butter

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 teaspoon sugar (optional, to caramelize the onions)

Salt and pepper to taste

Fresh parsley for garnish (optional)

Sear the Chicken: In a large skillet, heat the olive oil and butter over medium-high heat. Season the chicken thighs with salt and pepper, then add them to the skillet. Sear on both sides until golden brown, about 5-6 minutes per side. Remove the chicken from the skillet and set aside.

    Cook the Onions: In the same skillet, add the sliced onions. Sprinkle with a pinch of salt and sugar (if using). Sauté the onions over medium heat for about 10-15 minutes, stirring occasionally, until they are caramelized and soft.

      Add Garlic and Thyme: Stir in the minced garlic and thyme, cooking for an additional 1-2 minutes until fragrant.

        Deglaze the Pan: Pour in the beef broth, scraping up any brown bits from the bottom of the skillet. Bring it to a simmer.

          Combine Chicken with Onions: Return the chicken thighs to the skillet, nestling them into the onion mixture. Cover and cook for about 10-15 minutes on medium-low heat until the chicken is cooked through (internal temperature should reach 165°F).

            Add Cheese: Sprinkle the Gruyère cheese over the chicken and cover the skillet until the cheese melts, about 3-5 minutes.

              Serve: Garnish with fresh parsley if desired. Serve hot, ideally with crusty bread or over mashed potatoes.
