  • 8 ounces thinly sliced roast beef preferably from the deli
  • 4 large whole wheat tortillas for a healthier option
  • 1 cup shredded provolone cheese or mozzarella cheese
  • 1 cup beef broth for au jus
  • 1 tablespoon soy sauce adds depth of flavor
  • 1 tablespoon Dijon mustard for a hint of tang
  • 1/2 teaspoon black pepper
  • 3 cloves garlic minced
  • 2 tablespoons olive oil for cooking
  • salt to taste

Instructions
 

  • In a skillet over medium heat, add olive oil and minced garlic. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
  • Add the beef broth and soy sauce to the skillet, stirring to combine. Bring the mixture to a simmer and let it reduce for about 5 minutes to intensify the flavors.
  • While the broth simmers, lay out the whole wheat tortillas and spread a thin layer of Dijon mustard on each one. Evenly distribute the sliced roast beef and shredded provolone cheese on top of the tortillas.
  • Once the broth has reduced, drizzle a small amount over the meat and cheese on each tortilla. Roll each tortilla tightly and slice them into pinwheels or halves, securing with toothpicks if necessary.
  • In the same skillet, add the remaining beef broth mixture and bring to a simmer. Carefully place the tortilla roll-ups seam side down into the skillet, cooking for about 2-3 minutes on each side until crispy and golden.
  • Serve the roll-ups warm with the remaining beef broth in small bowls for dipping, garnished with fresh herbs if desired.

Tip 1: For extra flavor, marinate the roast beef in the broth mixture for an hour before assembling.
