1 ½ cups all-purpose flour

½ tsp sea salt

½ cup unsalted butter, cold and cubed

⅓ cup powdered sugar

1 large egg yolk

2-3 tbsp cold water

½ cup almond paste

¼ cup granulated sugar

1 tsp vanilla extract

1 egg (for egg wash)

Sliced almonds (for topping)

Powdered sugar (for dusting)

Instructions
 

Make the Dough: In a large bowl, sift the flour and salt together. Add the cubed cold butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. Stir in the powdered sugar.

    Add Egg Yolk: Add the egg yolk and 2 tablespoons of cold water to the flour mixture. Mix until it forms a soft dough; add more water if necessary. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

      Prepare the Filling: In a bowl, mix almond paste, granulated sugar, and vanilla extract until smooth and creamy. Set aside.

        Roll Out the Dough: Preheat your oven to 350°F (175°C). On a lightly floured surface, roll out the chilled dough to about ¼ inch thick. Cut the dough into squares or triangles, about 4x4 inches.

          Fill the Pastries: Place a spoonful of the almond paste filling in the center of each pastry piece. Fold the corners over to create a small pocket, or leave them open for a more rustic look.

            Egg Wash and Topping: Beat the egg in a small bowl and brush the tops of the pastries with it. Sprinkle with sliced almonds for added crunch.

              Bake: Place the pastries on a lined baking sheet and bake for 20-25 minutes or until golden brown and flaky.

                Cool and Dust: Remove from the oven and let cool for a few minutes. Dust with powdered sugar before serving.
