Ingredients

1 cup fresh cranberries

1 cup granulated sugar

1/2 cup water

1 teaspoon vanilla extract

1/2 teaspoon orange zest

1 loaf of challah bread (or any soft bread)

8 ounces cream cheese, softened

1/4 cup powdered sugar

1 teaspoon cinnamon

1/4 cup chopped pecans (optional)

Fresh mint leaves for garnish (optional)

Instructions

Make the Cranberry Sauce: In a saucepan over medium heat, combine fresh cranberries, granulated sugar, and water. Stir occasionally until the cranberries burst and the mixture thickens (about 10-15 minutes). Remove from heat and mix in the vanilla extract and orange zest. Let it cool completely.

Prepare the Bread: Slice the challah bread into 1/2-inch thick slices and trim the crusts. Using a rolling pin, flatten each slice of bread until thin.

Prepare the Cream Cheese Filling: In a bowl, mix the softened cream cheese, powdered sugar, cinnamon, and chopped pecans (if using) until smooth and creamy.

Assemble the Roll Ups: Spread a thin layer of the cream cheese mixture on each slice of flattened bread. Then, add a spoonful of the cooled cranberry sauce on top of the cream cheese.

Roll and Cut: Carefully roll each slice of bread from one end to the other. Once rolled, cut each roll into bite-sized pieces (about 2 inches).

Serve: Arrange the cranberry roll ups on a festive platter and garnish with fresh mint leaves if desired. Drizzle some extra cranberry sauce on top for added decoration and flavor.

Enjoy: Serve these delightful roll ups at your Christmas gathering and watch them disappear!
