Ingredients
  

1 cup quinoa

2 cups vegetable broth or water

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/2 cup corn (canned or frozen)

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 avocado, diced

Juice of 1 lime

3 tablespoons olive oil

1 teaspoon cumin

Salt and pepper to taste

Instructions
 

Rinse the quinoa under cold water to remove any bitterness.

    In a medium saucepan, combine the quinoa and vegetable broth (or water). Bring to a boil over high heat.

      Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it cool.

        In a large bowl, combine the cooled quinoa, cherry tomatoes, cucumber, red bell pepper, corn, red onion, and cilantro.

          For the dressing, whisk together the lime juice, olive oil, cumin, salt, and pepper in a small bowl.

            Pour the dressing over the quinoa mixture and toss gently to combine.

              Fold in the diced avocado just before serving to prevent it from mashing.

                Serve chilled or at room temperature and enjoy your refreshing Quinoa Fiesta Salad!
