Ingredients
  

1 medium head of cauliflower (about 4 cups grated)

2 tablespoons sesame oil

2 large eggs, beaten

1 cup mixed vegetables (carrots, peas, and corn, or your choice)

3 green onions, chopped

2 cloves garlic, minced

2 tablespoons soy sauce (or tamari for gluten-free)

Salt and pepper to taste

Optional: Cooked chicken, shrimp, or tofu for added protein

Optional: Sesame seeds for garnish

Instructions
 

Prepare the Cauliflower: Remove the leaves and stem from the cauliflower. Cut it into chunks and pulse in a food processor until it resembles rice (about 20-30 seconds). If you don't have a food processor, you can grate the cauliflower using a box grater.

    Sauté Vegetables: Heat 1 tablespoon of sesame oil in a large skillet or wok over medium heat. Add the mixed vegetables and sauté for about 3-4 minutes until they are tender. Add the minced garlic and the white parts of the green onions, and cook for another minute until fragrant.

      Scramble Eggs: Push the vegetable mixture to one side of the skillet. Pour the beaten eggs into the empty side and scramble them until fully cooked. Mix together with the vegetables.

        Add Cauliflower Rice: Add the grated cauliflower to the skillet, stirring everything together. Pour the soy sauce over the mixture and continue to stir-fry for about 5-7 minutes on medium-high heat, until the cauliflower is tender but not mushy. Season with salt and pepper to taste.

          Finish and Serve: Stir in the green tops of the green onions and any optional protein you’re using. Cook for an additional 1-2 minutes until everything is heated through.

            Garnish & Enjoy: Serve hot, garnished with sesame seeds if desired. Enjoy your delicious low-carb cauliflower fried rice!
