Easy Italian Meatloaf

Ingredients
  

1 lb ground beef

1 lb ground pork

1 cup breadcrumbs

1 cup grated Parmesan cheese

1/2 cup chopped fresh parsley

1/2 cup milk

1/2 cup finely chopped onion

2 cloves garlic, minced

2 large eggs

1 tsp Italian seasoning

1 tsp salt

1/2 tsp black pepper

1 cup marinara sauce (plus extra for topping)

1 cup shredded mozzarella cheese

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.

    In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, milk, onion, garlic, eggs, Italian seasoning, salt, and black pepper. Mix until just combined — do not overmix.

      Form the mixture into a loaf shape and place it into the prepared loaf pan. Make a slight indentation down the center of the loaf to prevent it from bulging while cooking.

        Pour the marinara sauce over the top of the meatloaf, spreading it evenly.

          Bake in the preheated oven for 60-75 minutes, or until the internal temperature reaches 160°F (70°C).

            About 10 minutes before it’s done, remove the meatloaf from the oven and sprinkle the shredded mozzarella cheese on top. Place it back in the oven until the cheese is melted and bubbly.

              Let the meatloaf rest for 10 minutes before slicing. Serve with additional marinara sauce on the side and garnished with fresh parsley.
