Ingredients

2 cups all-purpose flour

1 cup finely chopped fresh peaches (about 2 medium peaches)

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/2 cup unsalted butter, softened

2 large eggs

1/2 cup buttermilk or plain yogurt

1 teaspoon vanilla extract

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt

1 tablespoon fresh lemon juice

1/2 cup chopped pecans or walnuts (optional)

Extra cinnamon sugar for topping (1 tablespoon sugar mixed with 1 teaspoon cinnamon)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper for easy removal.

Prepare the Peaches: Peel and finely chop the fresh peaches. Toss them with 1 tablespoon of lemon juice to prevent browning and set aside.

Mix Dry Ingredients: In a large bowl, whisk together the flour, baking soda, ground cinnamon, and salt. Set aside.

Cream Butter and Sugars: In another bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).

Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

Incorporate Buttermilk: Mix in the buttermilk or yogurt until combined.

Combine Dry and Wet Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.

Fold in Peaches and Nuts: Gently fold in the chopped peaches and nuts, if using, until evenly distributed.

Transfer to the Pan: Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the cinnamon sugar mixture over the top for added flavor and crunch.

Bake: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Serve: Slice and enjoy this moist and flavorful cinnamon peach bread warm or at room temperature. It’s great for breakfast, a snack, or dessert!
