Ingredients

2 cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, melted and cooled

1 cup buttermilk

2 large eggs

1 teaspoon vanilla extract

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

2 cups fresh or frozen blueberries

Zest of 1 lemon (optional, for added flavor)

Extra sugar for sprinkling on top

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease it.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, lemon zest (if using), and salt until combined.

Combine Wet Ingredients: In another bowl, whisk the melted butter, buttermilk, eggs, and vanilla extract until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients, and gently fold until just combined. Do not overmix; a few lumps are okay.

Add Blueberries: Carefully fold in the blueberries, ensuring they are evenly distributed throughout the batter.

Fill Muffin Tin: Divide the batter evenly among the muffin cups, filling each about ¾ full. Sprinkle a little extra sugar on top of each muffin for a nice sugary crust.

Bake: Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Cool and Serve: Once baked, let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature!
