Ingredients
  

1 large cucumber, thinly sliced

1 cup cream cheese, softened

2 tablespoons Greek yogurt

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon lemon juice

Salt and pepper to taste

8 slices of whole grain or sourdough bread

1/4 cup radishes, thinly sliced (optional)

Lettuce leaves (for layering)

Instructions
 

In a mixing bowl, combine the softened cream cheese and Greek yogurt. Mix until smooth and creamy.

    Stir in the chopped fresh dill and lemon juice. Season with salt and pepper to taste. Adjust the seasoning as needed.

      Place the thinly sliced cucumbers on a clean kitchen towel and lightly sprinkle with salt. Allow them to sit for about 10 minutes to draw out excess moisture, then pat them dry.

        Toast the slices of bread lightly if desired for added texture.

          Spread a generous layer of the cream cheese mixture on one side of each slice of bread.

            Layer the prepared cucumber slices evenly over four of the slices. If using, add radish slices for a peppery crunch and top with a layer of lettuce.

              Place the remaining slices of bread on top, cream cheese side down, to create sandwiches.

                Carefully cut each sandwich into quarters or halves. Serve immediately or refrigerate for up to an hour before serving.
