Ingredients

1 ½ cups crushed graham crackers

⅓ cup unsalted butter, melted

¼ cup granulated sugar

16 oz cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

Food coloring (pastel shades)

Edible Easter decorations (mini chocolate eggs, sprinkles, etc.)

Instructions

Prepare the Crust: In a mixing bowl, combine the crushed graham crackers, melted butter, and granulated sugar. Stir until the mixture resembles wet sand.

Form the Crusts: Distribute the crust mixture evenly into the bottoms of mini cheesecake pans or muffin tins (you can use cupcake liners for easy removal). Press it down firmly with the back of a spoon. Refrigerate while you prepare the filling.

Make the Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.

Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully blended and fluffy.

Color the Cheesecake Mixture: Divide the cheesecake filling into smaller bowls based on how many colors you want to use. Add a few drops of food coloring to each bowl and gently mix until you achieve your desired pastel shades.

Fill the Crusts: Spoon or pipe the colored cheesecake mixtures into the prepared crusts, layering the colors for a beautiful visual effect or mixing them slightly for a marbled look.

Chill: Cover the mini cheesecakes and refrigerate for at least 4 hours or overnight to set properly.

Garnish: Before serving, top each mini cheesecake with edible Easter decorations such as mini chocolate eggs or colorful sprinkles to celebrate the season!

Serve: Carefully remove the mini cheesecakes from the pan or liners. Arrange them on a serving platter and admire your festive creations before diving in!
