1 cup granulated sugar

2 teaspoons baking powder

½ teaspoon baking soda

1 cup buttermilk (or regular milk with 1 tablespoon vinegar)

½ cup unsalted butter, melted

2 large eggs

2 teaspoons vanilla extract

2 cups fresh blueberries (or frozen, but do not thaw)

1 tablespoon all-purpose flour (for coating blueberries)

Optional: coarse sugar for sprinkling on top

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease with non-stick spray.

    Prepare Blueberries: In a small bowl, toss the blueberries with 1 tablespoon of flour. This will help prevent them from sinking during baking.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, salt, baking powder, and baking soda until well combined.

        Mix Wet Ingredients: In a separate bowl, combine the buttermilk, melted butter, eggs, and vanilla extract. Whisk until smooth.
