For the Honey Cake Layers:

1/2 cup honey

1/2 cup granulated sugar

1/2 cup unsalted butter (softened)

2 large eggs

1 teaspoon baking soda

3 cups all-purpose flour

1/2 teaspoon salt

1 teaspoon vanilla extract

For the Cream Filling:

2 cups heavy whipping cream

1 cup mascarpone cheese

1/2 cup powdered sugar

1 teaspoon vanilla extract

For the Decor:

Crushed walnuts or almonds (for garnish)

Honey drizzle (optional)

Instructions
 

Prepare Cake Layers:

    - In a medium saucepan over low heat, combine honey, sugar, and butter. Stir until the mixture is smooth and sugar is dissolved. Remove from heat and let cool slightly.

      - In a large bowl, whisk together eggs and baking soda. Slowly add the honey mixture while whisking continuously until well combined.

        - Gradually sift in flour and salt, stirring until the dough forms. It will be a soft, sticky dough.

          - Divide the dough into 8 equal portions. Roll out each portion to about 1/8 inch thick on a floured surface. Place the rolled dough on parchment-lined baking sheets and prick with a fork to prevent puffing.

            - Bake in a preheated oven at 350°F (175°C) for 5-7 minutes or until golden. Remove from the oven and let cool completely.

              Make the Cream Filling:

                - In a chilled mixing bowl, whip the heavy cream until soft peaks form. Gradually add powdered sugar and continue whipping until stiff peaks form.

                  - In another bowl, whisk together mascarpone cheese and vanilla extract until smooth and creamy.

                    - Gently fold the whipped cream into the mascarpone mixture until well combined.

                      Assemble the Cake:

                        - Take the first baked honey layer and spread a generous amount of the cream filling on top. Repeat with the remaining layers, stacking them one after the other and alternating with the cream.

                          - Once all layers are stacked, cover the top and sides of the cake with the remaining cream filling.

                            Chill and Serve:

                              - Refrigerate the assembled cake for at least 4 hours or overnight for the flavors to meld and the cake to firm up.

                                - Just before serving, garnish the top and sides with crushed walnuts or almonds and drizzle with honey if desired.
