For the Cookie Base:

1 cup unsalted butter, softened

½ cup granulated sugar

½ cup packed brown sugar

2 cups all-purpose flour

1 cup shredded coconut (toasted)

1 teaspoon vanilla extract

½ teaspoon salt

For the Caramel Layer:

1 cup caramel candies, unwrapped

2 tablespoons heavy cream

1 teaspoon sea salt (optional)

For the Chocolate Drizzle:

1 cup semisweet chocolate chips

1 tablespoon coconut oil

Prepare the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Make the Cookie Base: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy. Add in the vanilla and salt, mixing well. Gradually incorporate the flour until just combined. Fold in the toasted coconut.

      Bake the Base: Press the cookie mixture evenly into the bottom of the prepared pan. Bake for 20-25 minutes, or until lightly golden. Let it cool while you prepare the caramel.

        Prepare the Caramel: In a microwave-safe bowl, combine the caramel candies and heavy cream. Heat in the microwave in 30-second intervals, stirring in between, until the mixture is smooth and fully melted. If you want an extra touch, stir in the sea salt.

          Assemble the Bars: Pour the melted caramel over the cooled cookie base. Spread it evenly to cover the surface. Allow the caramel to set for about 15 minutes.

            Melt the Chocolate: In a small microwave-safe bowl, combine the chocolate chips and coconut oil. Heat in 30-second intervals until melted and smooth. Stir well.

              Drizzle the Chocolate: Spoon the melted chocolate over the caramel layer in a zigzag pattern, or use a piping bag for a more structured look.

                Cool and Cut: Place the bars in the refrigerator for at least 30 minutes to allow everything to set completely. Once set, lift from the pan using the parchment paper, and cut into squares or bars.
