2 large cucumbers, thinly sliced

1 cup plain Greek yogurt

1 tablespoon fresh dill, chopped (plus extra for garnish)

1 tablespoon lemon juice

1 teaspoon garlic powder

1 teaspoon honey or maple syrup

Salt and black pepper, to taste

1/4 red onion, thinly sliced (optional)

1 tablespoon white vinegar

Prepare the Cucumbers: Place the thinly sliced cucumbers in a colander and sprinkle them lightly with salt. Let them sit for about 10-15 minutes to release excess water. Afterward, rinse and pat them dry with a paper towel.

    Make the Dressing: In a mixing bowl, combine the Greek yogurt, chopped dill, lemon juice, garlic powder, honey (or syrup), and white vinegar. Whisk until smooth and creamy. Season with salt and black pepper to taste.

      Combine Ingredients: In a large serving bowl, add the drained cucumbers and red onion (if using). Pour the yogurt dressing over the cucumbers and gently toss until everything is well-coated.

        Chill and Serve: Cover the salad and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld. Before serving, garnish with extra fresh dill.
