Ingredients
  

2 large cucumbers, diced

2 large carrots, grated

1/4 red onion, thinly sliced

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup

Salt and pepper, to taste

1/2 teaspoon garlic powder (optional)

1/4 teaspoon crushed red pepper flakes (optional)

Instructions
 

In a large mixing bowl, combine the diced cucumbers, grated carrots, sliced red onion, and chopped fresh parsley. Toss gently to mix all the vegetables together.

    In a separate small bowl, whisk together the olive oil, apple cider vinegar, honey (or maple syrup), salt, pepper, garlic powder, and crushed red pepper flakes until well combined.

      Pour the dressing over the cucumber and carrot mixture and toss until the veggies are evenly coated with the dressing.

        Taste and adjust seasoning as needed. If you like it sweeter, add a bit more honey or maple syrup.

          Allow the salad to sit for about 10-15 minutes before serving; this will let the flavors blend beautifully.
