4 boneless skinless chicken thighs

1 large onion, sliced

4 cloves garlic, minced

1 cup low-sodium chicken broth

1/4 cup fresh lemon juice (about 2 lemons)

2 teaspoons lemon zest

1 tablespoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

1/2 cup kalamata olives, pitted and halved

1 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Begin by placing the sliced onion and minced garlic at the bottom of the crockpot. This creates a flavorful base for your dish.

    Season the chicken thighs generously with salt, pepper, oregano, and thyme. Then, place the seasoned chicken on top of the onion and garlic mixture.

      In a bowl, mix together the chicken broth, lemon juice, and lemon zest. Pour this mixture over the chicken in the crockpot, ensuring everything is coated.

        Scatter the halved kalamata olives and cherry tomatoes around the chicken within the crockpot, adding color and extra flavor.

          Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.
