Ingredients

2 lbs boneless, skinless chicken thighs

1 cup BBQ sauce (your choice of flavor)

1/2 cup chicken broth

1 tablespoon apple cider vinegar

1 tablespoon brown sugar

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Optional: sliced red onions and chopped cilantro for garnish

Instructions

In a large bowl, mix together the BBQ sauce, chicken broth, apple cider vinegar, brown sugar, garlic powder, onion powder, smoked paprika, salt, and pepper until well combined.

Place the chicken thighs in the bottom of the Crockpot.

Pour the BBQ sauce mixture over the chicken, ensuring the chicken is well coated.

Cover the Crockpot and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and easily shreds with a fork.

Once cooked, shred the chicken directly in the Crockpot using two forks, and stir it into the sauce to ensure it’s fully coated.

Serve the BBQ chicken on buns, over rice, or with a side of coleslaw. Garnish with sliced red onions and chopped cilantro if desired.
